Vegetables recipe - Stir-Fried Kailan

As I am growing up, my mum always told me over and over again that vegetables are good for me.  I don't really fond of vegetables when I was a kid.  I found it not tasty and it's so greeeennnn....

But now, I will make sure there always be vegetables in my menu.  I can't deny the facts that vegetables are naturally low in energy, fat, and salt.  So, today I am going to share with you my very simple vegetable recipes - Stir-Fried Kailan.

Stir-Fried Kailan
Ingredient:
Kailan, slices of chicken breast, ginger & garlic, oysters sauce, vegetables oil, water, corn flour & salt to taste.

Methods:
Stir fried ginger in a pan with a tablespoon of vegetables oil until fragrant, put in chicken and stir a while, then put in the ginger together with the Kailan. Lastly put in the 2 tbs of water that we mixed with oyster sauce and corn flour to make a thicker gravy. Salt to taste but you can skip this because of the oyster sauce.

When kailan change to darker color and the gravy is thicker...then...it's done! Enjoy...

Oyster Sauce ( I use vegetarian oyster sauce)
Slices of big & red onion, ginger & garlic,
Cooking Oil, salt and sugar to taste
Water & Corn flour ( for thicken the sauce)
Slices of Red Chili & chinese pastry for garnishing.

Methods:
Deep fried the fish until golden brown, put aside.
Pour in about 1 tbs of cooking oil in a pan, frying the onions until fragrant, then put in the black beans, make sure not to over frying, just enough to smell the fragrant than put in the oyster sauce and 3 tbs of water with corn flour.
Then, Put in the fish when it is about to thicken.
Put in salt & sugar to your taste (can skip this, cause the oyster and black beans have it's taste also)
When It's thicken, it's done... can put in the serving plate and put in garnishing...

Blueberry Cake

I made a Blueberry Cake last Saturday for my kids.  Just a simple sponge cake covered with whipping cream and top up with blueberry filling.  My kids really love the cake and the cream too but, never the filling.  My youngest one will ask me to scrap out the blueberry before enjoying the whole piece of the cake.

The recipe, everyone must already had their own favourite basic sponge cake.  As my recipe for quick and simple sponge cake would be:

1 1/2 cup  self raising flour
3/4 cup butter (soften)
3/4 cup caster sugar
3 eggs(grade A)
1 tsp vanilla extract

Methods:
Prepare 20" round baking tin, heat oven to 170 C.
Mix all ingredients in a medium bowl with a spatula.  Beat ingredients in medium high speed until smooth and glossy.  Pour mixer into prepared tin and bake for 25 minutes or until toothpick inserted in center comes out clean.

Let it cool, prepared whipping cream and covers and decorates the cake as you desire....
Happy baking...

Carrot Cake (Kek Karot)

Bahan-bahannya:
1 cawan walnut (dipanggang dan cincang kasar)
2 1/2 cawan karot (dikisar halus)
2 cawan tepung gandum (diayak)
1 sudu teh Baking Soda
1 1/2 sudu teh serbuk penaik
1/2 sudu teh garam
1 1/2 sudu teh serbuk kayu manis (Cinnamon)
4 biji telur (gred A)
1 1/2 cawan gula halus
1 cawan minyak kanola (minyak jagung pun orait juga)
2 sudu teh vanilla extract

Caranya:

After that, masukkan minyak perlahan dari tepi bekas tadi diikuti dengan vanilla.  Campuran tadi dipukul lagi sehingga sebati.
